Spiced Molasses Rolls with Sweet Cinnamon Icing

Ingredients:

For the Dough:

  • 240 ml (1 cup) milk, lukewarm
  • 1 packet (2 ¼ tsp) active dry yeast
  • 500 grams (4 cups) all-purpose flour, plus extra for dusting
  • 50 grams (¼ cup) granulated sugar
  • 8 grams (2 tsp) ground cinnamon
  • 2 grams (1 tsp) ground ginger
  • 1 gram (½ tsp) ground cloves
  • 2.5 grams (½ tsp) salt
  • 113 grams (1 stick) unsalted butter, softened and cubed
  • 2 large eggs
  • 60 ml (¼ cup) molasses

For the Filling:

  • 56 grams (4 tbsp) unsalted butter, softened
  • 56 grams (4 tbsp) unsalted butter, melted
  • 150 grams (2/3 cup) light brown sugar
  • 8 grams (1 tsp) ground cinnamon
  • 15 ml (1 tbsp) molasses

For the Icing:

  • 85 grams (6 tbsp) unsalted butter, softened
  • 156 grams (1 ¼ cups) powdered sugar
  • 8 grams (1 tsp) ground cinnamon
  • 15 ml (1 tsp) molasses
  • 5 ml (1 tsp) vanilla extract
  • 15 ml (1 tbsp) heavy cream

Directions:

  1. Warm the milk to 43°C (110°F) and dissolve the yeast in it. Let it activate for about 10 minutes.
  2. In a large mixing bowl, combine the flour, sugar, cinnamon, ginger, cloves, and salt. Work the cubed butter into the flour mixture using your fingers or a pastry cutter until crumbly.
  3. In another bowl, whisk the eggs and mix in the molasses. Add this, along with the yeast mixture, to the flour mixture.
  4. Knead with a dough hook on medium speed for 6-10 minutes until the dough forms a ball and is not too sticky.
  5. Transfer the dough to a greased bowl, cover with a towel, and let it rise in a warm place until doubled in size, about 90 minutes.
  6. Punch down the dough and roll it out on a lightly floured surface into a rectangle. Spread the softened butter across the dough, leaving a border around the edge.
  7. Mix the melted butter with brown sugar, cinnamon, and molasses and spread it over the buttered dough.
  8. Roll the dough into a log and cut into 8 large rolls. Place these in a deep 9×13-inch baking dish, cover with a towel, and let rise for another 45 minutes.
  9. Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes until they are nicely browned.

While the rolls are baking, make the icing by beating together the butter, powdered sugar, cinnamon, molasses, vanilla extract, and heavy cream until smooth.

Once the rolls are baked, let them cool slightly and then drizzle with the sweet cinnamon icing.
