Spicy Mango Curd Cake
For the Cake:

300g plain flour
2 tsp baking powder
50g ground almonds (can be substituted with equal flour for a nut-free version)
230g caster sugar
1/4 tsp salt
170ml soya milk
50ml lemon juice
150g mango purée
120ml vegetable oil
80g vegan yogurt (mango flavored or plain)
For the Mango Curd:

60ml lemon juice
200g mango purée
50ml water
30ml soya milk
60g caster sugar
15g cornflour
1/2 to 1 whole red chili, seeds removed and finely chopped
Instructions:

Preheat your oven to 180°C (356°F) with a fan setting.
In a bowl, mix together plain flour, baking powder, ground almonds, caster sugar, and salt.
In another bowl, blend soya milk, lemon juice, mango purée, oil, and vegan yogurt.
Combine the wet and dry ingredients.
Pour the batter into a greased 6-inch or 8-inch cake tin and bake for 60-75 minutes or until a skewer comes out clean.
For the Mango Curd:

Combine lemon juice, mango purée, water, and soya milk in a saucepan.
Stir in caster sugar and cornflour.
Add the finely chopped chili to the mixture.
Cook over medium heat, stirring constantly, until the mixture thickens into a curd.
