Sticky Date Pudding with Homemade Butterscotch Sauce

  • 165g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon

Instructions:

Butterscotch Sauce:

  1. In a saucepan, combine the butter, brown sugar, and cream.
  2. Cook over low heat, stirring until everything is combined and the sauce is smooth.
  3. Once done, transfer to a container and store in the refrigerator.

Date Pudding:

  1. Preheat the oven to 180°C (356°F).
  2. Drain the soaked dates. If they’re still in large pieces, chop or blend them into a rough paste.
  3. In a mixing bowl, cream together the butter and brown sugar.
  4. Beat in the eggs, one at a time, ensuring each is well incorporated.
  5. Sift in the flour, baking powder, and cinnamon. Gently fold these into the wet ingredients.
