Ingredients:

- 172g butter
- 113g caster sugar
- 60g soft brown sugar
- 3/4 cup & 2 tbsp heavy cream
- A pinch of salt

- 175g Medjool dates, pitted and chopped
- 1 tsp baking soda
- 1 & 1/4 cup boiling water
- 50g softened butter
- 80g soft brown sugar
- 2 eggs
- 175g all-purpose flour
- 1 tsp baking powder
- 1/8 tsp salt
Instructions:
- Prepare the Sauce:
- Combine butter, both sugars, heavy cream, and salt in a pan.
- Heat slowly until the butter melts, then bring to a boil.
- Let it boil for 2 minutes until slightly thickened.
- Prepare the Pudding:
- Preheat the oven to 180°C (350°F). Grease a 25cm x 20cm baking pan and set aside.
- In a small bowl, mix the dates, baking soda, and boiling water. Let sit for 10 minutes until the dates soften.
