Strawberry Lemon Rolls

**Tangzhong Preparation:**⁣ Ingredients:

  • 100 g whole milk⁣
  • 20 g bread flour⁣

Method:

  1. In a saucepan, combine milk and bread flour.
  2. Stir over medium heat until the mixture thickens.
  3. Transfer to a bowl, cover with cling wrap, and let cool to room temperature.

**Bread Dough:**⁣ Ingredients:

  • 360g bread flour⁣
  • 50g sugar⁣
  • 7g instant dry yeast⁣
  • 5g salt⁣
  • 1 large egg⁣
  • 130g whole milk⁣
  • Previously prepared tangzhong⁣
  • 85g unsalted butter, softened⁣

Method:

  1. Combine all ingredients, excluding butter, in a stand mixer bowl with a dough hook.
  2. Knead on a medium setting for 10 minutes.
  3. Gradually incorporate butter, adding one cube at a time.
  4. Continue kneading for another 10-20 minutes or until the dough achieves the window-pane stage.
  5. Transfer the dough to a greased bowl and let it rise for about 90 minutes or until it doubles in size.

**Strawberry-Lemon Blend:**⁣ Ingredients:

  • 250g frozen strawberries⁣
  • 125g sugar⁣
  • Zest and juice of ½ lemon⁣
  • 10g corn starch mixed with 10g water⁣

Method:

  1. Combine strawberries, sugar, lemon zest, and juice in a saucepan.
  2. Cook over medium heat for 20 minutes, stirring and mashing the berries.
  3. Mix the cornstarch and water to create a slurry and pour into the saucepan.
  4. Lower the heat and simmer for an additional 5 minutes, stirring consistently.
  5. Strain the mixture through a sieve into a bowl, let it cool.

**Baking Process:**⁣

  1. Roll out the dough into a 16x16-inch square.
  2. Spread the strawberry-lemon filling.
  3. Roll up the dough tightly and cut it into 9 pieces.
  4. Arrange the slices in a 9x9-inch baking dish.
  5. Allow them to rise for 30 minutes or until they look plump.
  6. Bake in a preheated oven at 180C/350F for 25-30 minutes or until they reach an internal temperature of 95C/200F.

**Cream Cheese Icing:**⁣ Ingredients:

  • 100g full-fat cream cheese⁣
  • 25g softened unsalted butter⁣
  • 100g sifted powdered sugar⁣⁣
  • 1/4 tsp vanilla extract⁣⁣
  • A minuscule pinch of salt⁣

Method:

  1. Beat together cream cheese and butter until pale and fluffy.
  2. Mix in powdered sugar, vanilla, and salt until smooth.
  3. Once rolls are cooled slightly, drizzle with the frosting and garnish with fresh strawberries and lemon zest. Enjoy!
