Create a no-bake, refreshing dessert layered with graham crackers, creamy vanilla pudding, and strawberry pie filling with these simple instructions.

Equipment:

  • Measuring cups and spoons
  • Mixing bowls
  • 7x10x2-inch deep baking dish

Ingredients:

  • 21-ounce can of strawberry pie filling
  • Two 5.1-ounce packages of French Vanilla instant pudding mix
  • 5 cups of milk
  • 8 ounces of whipped cream
  • Approximately 21 graham crackers

Instructions:

  1. In a large mixing bowl, whisk together the instant vanilla pudding mix and milk until the mixture becomes thick.
  2. Gently fold in the whipped cream into the thickened pudding to keep the mixture light and airy.
  3. Take your 7x10x2-inch deep baking dish and create a base layer with graham crackers. You may need to break some crackers to fit the dish perfectly.
  4. Pour half of the pudding and whipped cream mixture over the first layer of graham crackers, spreading it evenly.
  5. Add another layer of graham crackers over the pudding layer.
  6. Repeat the layers by adding the remaining pudding mixture and then one final layer of graham crackers.
  7. Top the final layer of graham crackers with the strawberry pie filling, spreading it to cover the entire surface.
  8. Cover the baking dish with plastic wrap and place it in the refrigerator for at least 4 hours to allow the cake to set up and the crackers to soften.

Once set, slice and serve this Strawberry Vanilla Icebox Cake as a delightful and easy dessert that's perfect for any occasion or a simple family treat. Enjoy the creamy layers intertwined with the flavors of ripe strawberries and crisp graham crackers.
