Sumptuous Blueberry Bliss Cake

Ingredients:

  • 3 cups fresh blueberries
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 4 small eggs
  • 3 tablespoons oat milk or regular cow’s milk
  • 1 teaspoon cornstarch
  • Juice of half a lemon
  • 1 teaspoon pure vanilla extract
  • Powdered sugar for dusting

Instructions:

  1. Preheat your oven to 180°C (350°F) and ready a 26cm cake pan with grease and a dusting of flour.
  2. Whisk together flour and baking powder in a bowl and set aside.
  3. In another bowl, cream the softened butter with the sugar until light and fluffy.
  4. Beat in the eggs, one at a time, ensuring each is well incorporated before adding the next.
  5. Mix in the vanilla extract and fresh lemon juice.
  6. Gradually alternate adding the flour mixture and milk to the creamed butter, starting and ending with the dry ingredients, until the batter is smooth and creamy.
  7. Gently coat the blueberries with cornstarch, which helps to keep them from sinking during baking.
  8. Pour half of the batter into the cake pan, scatter half of the blueberries on top, then cover with the remaining batter. Finally, sprinkle the rest of the blueberries over the batter, pressing them down lightly.
  9. Bake for about 40 minutes. The cake should be golden brown, and a toothpick should come out clean when inserted in the center.
  10. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack.
  11. Once the cake is cool, dust it with powdered sugar for a beautiful and sweet finishing touch.
