Sunshine Mimosa Cake

Ingredients:

For the Pan di Spagna (Sponge Cake):

  • 200g whole eggs
  • 200g sugar
  • 200g flour
  • Vanilla or vanillin

  • 1 liter whole milk
  • 8 egg yolks
  • 300g sugar
  • 100g cornstarch
  • Vanilla or vanillin
  • Zest of one lemon
  • 250g fresh cream

Instructions:

  1. Prepare the Pan di Spagna: Whip eggs with sugar and vanilla until fluffy, light, and frothy. Gently fold in sifted flour from bottom to top to keep the mixture airy. Pour into a 24cm buttered and floured cake tin. Bake at 180°C for 30 minutes.
  2. Make the Cream: Heat milk with a tablespoon of sugar. In another bowl, beat egg yolks with sugar and vanilla, then mix in cornstarch. Once the milk boils, lower the heat, add a ladle of milk to the egg mixture to temper it, then combine back with the milk. Whisk until the cream thickens. Turn off the heat, add lemon zest (remove it later), cover with film, and let it cool completely in the fridge. Once cool, gently fold in whipped cream.
