  • 105g dark chocolate (72.5% cocoa)
  • 20g milk chocolate
  • 150g semi-salted butter
  • 2 eggs + 1 egg yolk
  • 120g sugar
  • 25g cornstarch
  • 2g grated Tonka bean

  1. Melt the butter and chocolates together, either in a double boiler for the adventurous, or gently in the microwave for the pragmatic. Set aside.
  2. In a separate bowl, whisk the eggs, egg yolk, and sugar until the mixture triples in volume, a critical step for achieving the perfect texture.
  3. Sift in the cornstarch and add the grated Tonka bean, folding gently to incorporate without deflating the mixture.
  4. Gradually blend in the chocolate and butter mixture until smooth and homogenous.
  5. Pour the batter into a 16cm springform pan that has been buttered and floured or lined with parchment paper. A regular 16cm pan, buttered and lightly floured, works as well if you're not planning to unmold the fondant.
  6. Chill the batter in the refrigerator for 3 hours before baking to ensure the fondant sets properly.
  7. Bake at 125°C for 40 minutes. The center should still wobble slightly when removed from the oven.
  8. Allow the fondant to cool completely at room temperature, away from moisture, ideally overnight, before serving.
