  • Purple sweet potato powder (for color): 8g

For the Basque Cheesecake Layer:

  • Cream cheese (room temperature): 200g
  • Sugar: 30g
  • Eggs: 2
  • Whipping cream: 170g
  • Corn starch: 12g

Instructions:

For the Taro Layer:

  1. In a blender or food processor, combine the soft boiled taro, sugar, milk, whipping cream, condensed milk, and purple sweet potato powder.
  2. Blend until you achieve a smooth purée.
  3. Prepare a cheesecake mold by lining it with parchment paper, ensuring the paper extends above the rim of the mold to accommodate the rising cheesecake.
  4. Spread the taro purée at the base of the mold, smoothing it out to create an even layer. Set aside.

For the Basque Cheesecake Layer:

  1. In a mixing bowl, beat together the cream cheese and sugar until smooth and creamy.
  2. Gradually add in the eggs, one at a time, mixing well after each addition.
  3. Slowly pour in the whipping cream, and continue mixing.
  4. Sift in the corn starch and blend until all ingredients are thoroughly combined and the mixture is smooth.
  5. Carefully pour the cheesecake mixture over the taro layer in the prepared mold.

Baking:

  1. Preheat your oven to 210 degrees Celsius (410 degrees Fahrenheit).
  2. Place the mold in the oven and bake for about 30 minutes, or until the top is deeply golden and slightly burnt.
  3. Remove from the oven and let it cool to room temperature.
  4. Once cooled, refrigerate for at least 4 hours, or overnight for best results.

To serve, remove the cheesecake from the mold, peel off the parchment paper, and slice using a sharp knife. The cheesecake combines the unique taste and texture of taro with the rich, velvety flavor of a Basque cheesecake. Enjoy your culinary creation!
