Thick NYC Christmas Cookies

Ingredients

  • 115g unsalted butter, at room temperature
  • 160g light brown sugar
  • 40g granulated sugar
  • 1 large egg, at room temperature
  • 2 tsp vanilla extract
  • 315g plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda (baking soda)
  • 1 tsp salt
  • 150g white chocolate chips
  • 100g red & green M&M’s
  • 3 tbsp festive sprinkles

Instructions

  1. Preheat your oven to 180°C (160°C for fan ovens). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until thoroughly combined.
  4. In another bowl, whisk together the plain flour, baking powder, bicarbonate of soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the white chocolate chips, M&M's, and festive sprinkles until evenly distributed throughout the dough.
  7. Scoop the dough onto the prepared baking sheet, forming 9 equally sized cookies.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are just starting to turn golden but the center is still soft.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
