  • Base:
    • 350g ginger nut biscuits
    • 150g vegan butter, melted
  • Apples:
    • 3 large Granny Smith apples
    • 2 tablespoons brown sugar
    • Zest and juice of half an orange

  • Cheesecake:
    • 375g silken tofu
    • 225ml vegan double cream
    • 200g caster sugar
    • 45g corn flour
    • 1 tablespoon vanilla bean paste
    • 1 heaped teaspoon cinnamon
  • Vegan caramel sauce (see previous recipe)

Instructions:

  1. Preheat the oven to 210°C (410°F) fan setting. Grease and line an 8-inch loose-bottom tin with parchment paper.
  2. Crush the biscuits to a fine crumb, mix with melted butter, and press into the base and sides of the tin. Freeze to firm up.
  3. Peel and slice apples, mix with sugar, cinnamon, orange zest and juice.
  4. Blend all cheesecake ingredients until smooth.
  5. Pour half the cheesecake mixture onto the biscuit base, layer with apples, then cover with the remaining cheesecake mix. Top with more apple slices.
  6. Bake for 45 minutes until golden. It should still jiggle slightly. If needed, cover with foil to prevent over-browning.
  7. Cool completely, then refrigerate overnight to set.
  8. Once set, remove from the tin, place on a serving platter, and cover generously with caramel. Serve with extra caramel on the side.
