Traditional Pistachio Kadayif

Ingredients

For the Kadayif:

  • 300 grams of Kadayif (shredded phyllo dough)
  • 150 grams of unsalted butter, melted and cooled
  • A generous handful of finely chopped pistachios, or alternatively, walnuts

For the Sugar Syrup:

  • 200 grams of granulated sugar
  • 200 milliliters of water
  • A splash of fresh lemon juice

Instructions

  1. Begin with the sugar syrup: Combine the sugar, water, and lemon juice in a saucepan. Boil for 13-14 minutes until it reaches a syrupy consistency. Let it cool down to room temperature.
  2. Gently tease apart the strands of Kadayif to separate them and fluff them up.
  3. Drizzle the cooled melted butter over the Kadayif. Mix gently, ensuring each strand is buttery and glistening.
  4. Press a thin layer of the buttered Kadayif into the base of small round molds, aiming for a thickness of about 2 centimeters.
  5. Firmly compact the layer with the back of a spoon or a glass to create a dense base.
  6. Sprinkle a layer of the finely chopped pistachios over the Kadayif layer, creating a treasure trove of nuts.
  7. Cover the pistachios with another layer of Kadayif, pressing down firmly to create a snug nutty sandwich.
  8. Continue this process until all ingredients are used, making sure the final layer is well-pressed and compact. Chill in the refrigerator for 45 minutes to set.
  9. Preheat the oven to 180°C (356°F). Bake the Kadayifs until they’re golden and crisp to the touch.
  10. Remove from the oven and immediately drench with the cool sugar syrup, starting from the center and moving outwards. Allow the Kadayifs to cool and soak up the syrup.
  11. Before serving, sprinkle with additional chopped pistachios for a visually appealing finish.
  12. If desired, crown each piece with a dollop of whipped cream, but only after the Kadayifs have rested for a few hours to ensure the layers have fully soaked up the syrup.
