Tropical Mango Cupcakes

Escape into a tropical paradise with these Tropical Mango Cupcakes, a perfect blend of sweet mango puree and creamy mascarpone frosting, all nestled atop a soft and fluffy cake base.

Ingredients for 6 Cupcakes:

For the Cupcakes:

  • 1/4 cup plus 1 tablespoon butter, at room temperature
  • 1/3 cup sugar
  • 3/4 cup all-purpose flour
  • 1 large egg
  • 3 tablespoons milk
  • A pinch of salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

For the Filling and Mango Cream:

  • 1 small or 1/2 large mango, pureed

For the Topping:

  • A little less than 1/2 cup cream
  • 3/4 cup mascarpone cheese
  • 1 tablespoon powdered sugar
  • 2-3 tablespoons of mango puree

Instructions:

  1. Preheat your oven to 180°C (350°F) and prepare a cupcake pan with liners.
  2. Cream the butter and sugar together in a bowl until the mixture is light and fluffy.
  3. Beat in the egg, then gradually mix in the flour, milk, salt, vanilla extract, and baking powder until just combined.
  4. Fill each cupcake liner 2/3 full with the batter and bake for 20-25 minutes, or until a toothpick comes out clean.
  5. While the cupcakes bake, prepare the mango puree by blending the mango until smooth. Reserve some puree for the topping.
  6. For the cream topping, whip the cream slightly, then add in the mascarpone, powdered sugar, and 1-2 tablespoons of mango puree. Continue whipping until the mixture reaches a creamy, stiff consistency.
  7. Once the cupcakes have cooled, cut a small hole in the center of each and fill with mango puree.
  8. Pipe or spread the mango mascarpone cream on top of the cupcakes, concealing the filled centers.
  9. Garnish each cupcake with a dollop of the reserved mango puree.
