Ultimate Apple Crumb Cake

For the Streusel Topping:

  • 2/3 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 3-4 tablespoons butter, melted

For the Cake:

  • 1/3 cup unsalted butter, softened
  • 2 large eggs
  • 1/3 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup Greek yogurt

For the Dry Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup chopped Honeycrisp apple (from 1 medium apple, peeled and chopped into ¼ inch pieces)

For the Glaze:

  • 2 tablespoons butter, melted
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • A pinch of cinnamon
  • 1-2 tablespoons milk (any kind), adjust to desired consistency

Instructions:

  1. Start with the streusel topping. In a small bowl, combine flour, brown sugar, cinnamon, and salt. Pour in melted butter and use your fingers to mix until you have a crumbly consistency. Set aside in the fridge.
  2. For the cake, use a large bowl to cream together the softened butter and both sugars with a hand mixer until fluffy (about 2 minutes).
  3. Beat in the eggs and vanilla extract, continuing to mix for another 2 minutes.
