Ingredients for a 6-inch Layered Cake: (Ensure all ingredients are at room temperature)

Cake:

  • 240g All-Purpose Flour
  • 1.5 tbsp Cocoa Powder
  • 1 tsp Corn Starch
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 tsp Vanilla Extract
  • 220g Milk (Almond milk or any unsweetened milk of your preference)
  • 1/2 tbsp White Vinegar
  • 20g Unsweetened Yogurt
  • 60ml Canola Oil (or another neutral oil)
  • 200g Granulated Sugar
  • 1/4 tsp Red Food Color Gel or Powder (adjust to desired shade)

Cream Cheese Frosting:

  • 150g Butter (Opt for vegan butter sticks or your preferred butter)
  • 150g Cream Cheese (Ensure it’s at room temperature; you can use vegan cream cheese or any regular cream cheese)
  • 1/2 tsp Vanilla Extract
  • 150g Powdered Sugar

Directions:

  1. Preparation: Preheat the oven to 350°F (175°C). Grease two 6-inch cake tins, then line them with baking paper.
  2. Wet Mix: In a large bowl, mix together the milk, yogurt, and vinegar. Let it sit for a few minutes until it curdles. Introduce sugar, oil, and vanilla extract to this mixture and stir until the sugar dissolves. Add red food coloring until the desired shade is achieved.
  3. Dry Mix: In a separate bowl, whisk together all the dry ingredients.
  4. Cake Batter: Gradually fold the dry ingredients into the wet mix using a spatula. Once combined, divide the batter equally between the two cake pans, ensuring to tap them gently to remove any air bubbles.
  5. Baking: Place the cake tins in the preheated oven and bake for 20-25 minutes. After baking, allow the cakes to cool completely before you start the frosting.
  6. Cream Cheese Frosting: In a mixing bowl, whip the butter and powdered sugar together for about 5 minutes, or until the mixture is fluffy and creamy. Add the room-temperature cream cheese and vanilla extract, and mix for an additional minute.
  7. Assembling the Cake: Place one cake layer on a plate or cake stand. Spread a generous layer of the frosting on top. Place the second cake layer on top and press down gently. Frost the top and sides of the cake with the remaining cream cheese frosting.
  8. Serving: Slice, serve, and savor the delectable flavors of your homemade Red Velvet Cake!
