Ingredients:

  • 280g all-purpose flour (non-self-rising)
  • 75g unsweetened cocoa powder
  • 10g baking powder (about 2 and a half teaspoons)
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 tablespoons instant coffee (optional)
  • 250g sugar
  • 2 teaspoons vanilla extract
  • 60ml sunflower or neutral oil
  • 300ml buttermilk (280ml milk + 1 tablespoon lemon juice or vinegar) or juice of half a lemon
  • 60g melted butter, warm
  • 2 eggs
  • Chocolate chips or chunks, 100g (plus extra for decoration, optional)

Instructions:

  1. Melt the butter and set it aside. In a bowl, sift together flour, cocoa, salt, baking soda, baking powder, coffee (if using), and sugar.
  2. In a large bowl, whisk together eggs, buttermilk, melted butter, oil, and vanilla.
  3. Gently combine the dry and wet mixtures without overmixing.
  4. Coat the chocolate chips or chunks with a bit of flour (to prevent sinking) and fold them into the batter.
  5. Line a muffin tin with muffin papers and fill each just over halfway with the mixture.
  6. Top with additional chocolate chips or chunks and bake in a preheated oven at 180°C (356°F) for about 20 minutes.

Let the muffins cool down, and then they are ready to be enjoyed!
