Upgraded Oreo Cheesecake Recipe

Ingredients:

For the Biscuit Base:

  • Crushed Oreos: 130g
  • Unsalted Butter (melted): 55g

For the Cheese Paste:

  • Cream Cheese (room temperature): 440g
  • Sugar: 80g
  • Yogurt: 100g
  • Vanilla Extract: 1g
  • Lemon Juice: 15g
  • Gelatin: 10g
  • Milk: 30g
  • Light Cream: 190g
  • Crushed Oreos: 45g
  • Whole Oreos: 17

Instructions:

Biscuit Base:

  1. Prepare a square mold by covering the sides with plastic wrap or a seal. Ensure the base is exposed for the crust.
  2. In a mixing bowl, combine the crushed Oreos with the melted butter until the mixture resembles wet sand.
  3. Transfer this mixture into the mold, pressing down firmly to create an even base. Make sure to have some of the crushed Oreos stick to the sides for extra crunch and aesthetics. Place the mold in the refrigerator to set.

Cheese Paste:

  1. In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
  2. Incorporate the yogurt, vanilla extract, and lemon juice into the cream cheese mixture.
  3. In a separate, microwave-safe bowl, combine the gelatin and milk. Heat briefly until the gelatin dissolves completely. Gradually pour the gelatin mixture into the cheese paste while mixing.
  4. Add the light cream and give it another good mix until smooth.
  5. Fold in the crushed Oreos into the cheese paste.
  6. Pour about a quarter of the cheese mixture into the mold, then place some whole Oreos against the sides. Pour another quarter of the mixture over the Oreos and then freeze for about 10 minutes.
  7. Arrange 5 whole Oreos on the surface of the semi-set cheese layer. Pour the remaining cheese paste over these Oreos, ensuring they’re covered.
  8. Refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set completely.
  9. Once set, gently remove the cheesecake from the mold and peel off the plastic wrap.
