- Whisk together the gluten-free flour, cornstarch, baking powder, and salt in a large bowl. Set aside.
- In a separate bowl, using a hand mixer or stand mixer, cream the melted plant butter with half of the sugar until fluffy, about 1.5 minutes.
- Add the remaining sugar and vegetable oil, mixing until well combined and fluffy.
- Incorporate the eggs two at a time, ensuring they are well mixed in after each addition. Then blend in the vanilla extract and vanilla bean paste.
