Vanilla Cake with Vanilla Frosting

Indulge in a delightful vanilla cake that's both gluten-free and can be made dairy-free, paired with a vibrant vanilla frosting.

Ingredients:

For the Cake:

  • 2 ¾ cups gluten-free 1:1 baking flour
  • 2 tablespoons cornstarch
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup dairy-free Greek yogurt or regular Greek yogurt
  • 2 ¼ cups granulated sugar
  • ½ cup vegetable oil
  • ½ cup plant-based butter, melted and cooled
  • 1 cup oat milk, room temperature
  • 2 teaspoons vanilla extract
  • 2 teaspoons vanilla bean paste
  • 6 large eggs, room temperature

For the Frosting:

  • 2 packets of Singing Dog vanilla frosting mix
  • Rose icing color
  • Pastel confetti sprinkles for decoration

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. Whisk together the gluten-free flour, cornstarch, baking powder, and salt in a large bowl. Set aside.
  3. In a separate bowl, using a hand mixer or stand mixer, cream the melted plant butter with half of the sugar until fluffy, about 1.5 minutes.
  4. Add the remaining sugar and vegetable oil, mixing until well combined and fluffy.
  5. Incorporate the eggs two at a time, ensuring they are well mixed in after each addition. Then blend in the vanilla extract and vanilla bean paste.
  6. Gradually mix in half of the dry ingredients, followed by the oat milk and yogurt. Once those are incorporated, add the remaining dry ingredients, mixing until just combined. The batter should be thick.
  7. Divide the batter evenly between the prepared cake pans, smoothing the top with a spatula.
  8. Bake for 30-37 minutes, or until the cakes are lightly golden and a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for a while, then transfer to a wire rack to cool completely.

For the Frosting:

  1. Prepare the Singing Dog vanilla frosting according to the packet's instructions. To color, dip a toothpick into the rose icing color and swirl it into the frosting. Mix until you achieve the desired color.
  2. Once the cakes are cool, apply the frosting. Decorate with pastel confetti sprinkles as desired.

Notes:

  • All ingredients should be at room temperature to ensure a smooth batter and even baking.
  • For a dairy-free version, ensure the yogurt and milk used are plant-based.
  • The coloring can be adjusted to your preference; start with a little and add more as needed.
