Ingredients:

  • Cake:
    • 240g almond milk
    • 1 tbsp apple cider vinegar
    • 100g coconut sugar

    • 50g almond flour
    • 2 tbsp baking powder
    • 3 apples, grated
  • Caramel Sauce:
    • 55g coconut oil
    • 60ml maple syrup
    • 2 tbsp almond butter
    • Sea salt, vanilla, or cinnamon to taste

Method:

  1. Preheat the oven to 180°C. Grease a Bundt cake tin.
  2. In a mixing bowl, combine almond milk with apple cider vinegar. Set aside for a few minutes to thicken.
  3. Whisk in the coconut sugar and coconut oil until well combined.
  4. Sift in the self-raising flour, vegan vanilla protein powder, almond flour, and baking powder. Stir until just mixed.
