Vegan Chocolate Orange Marble Cake with Protein-Infused Ganache

Ingredients:

  • Orange Sponge:
    • 150g self-raising flour
    • 50g vegan vanilla protein powder
    • 1/2 tsp baking powder
    • 1 tsp bicarbonate of soda
    • 100g sugar
    • 200g dairy-free milk mixed with 1 tsp vinegar
    • 65g dairy-free yogurt
    • 50g neutral oil
    • 1 tsp orange extract
    • Zest from 1 orange
  • Chocolate Sponge:
    • 3 tbsp cocoa powder
    • 3 tbsp warm water
  • Ganache:
    • 200g dark chocolate orange
    • 200g coconut cream

Method:

  1. Preheat the oven to 170°C. Grease a bundt pan.
  2. Combine dairy-free milk with vinegar and set aside to thicken.
  3. Sift together flour, protein powder, baking powder, and bicarbonate of soda in a bowl.
  4. Mix wet ingredients (thickened milk mixture, yogurt, oil, orange extract, zest) in another bowl.
  5. Combine wet ingredients with dry, stirring gently.
  6. Make a cocoa paste with cocoa powder and warm water. Mix 1/3 of the orange batter with this paste.
  7. Alternate spooning orange and chocolate batters into the bundt pan.
  8. Bake for 35-40 minutes, or until a toothpick comes out clean.
  9. For the ganache, heat coconut cream and pour it over the dark chocolate orange, mixing until smooth.
  10. Allow the ganache to cool and thicken.
  11. Once the cake has cooled, pour the ganache over the top.
