  • 118ml (½ cup) olive or neutral oil
  • 80g (⅓ cup) vegan yogurt
  • 180g (⅘ cup) brown sugar
  • 1 tablespoon vanilla extract
  • 280g (2 ¼ cups) all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 1 teaspoon ground cinnamon

For the Glaze:

  • 120g (1 cup) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon non-dairy milk

Instructions

  1. Begin by heating your oven to 200°C (392°F). Place muffin liners in your tray.
  2. Combine the streusel ingredients until crumbly and refrigerate.
  3. For the filling, simply mix brown sugar and cinnamon. Set aside.
  4. Stir together soy milk and vinegar to create a vegan buttermilk.
  5. Whisk together oil, vegan yogurt, brown sugar, and vanilla. Then blend in the buttermilk.
  6. In a separate bowl, whisk together the dry ingredients.
