Vegan Coconut and Chocolate Sweet Rolls with Sticky Glaze

Ingredients:

  • Dough:
    • 1 cup dairy-free milk, warm
    • ¼ cup brown sugar
    • 2 ¼ tsp dry yeast

  • Filling:
    • 3 tbsp coconut oil, melted
    • 1/2 cup dark chocolate chunks

    • ½ cup powdered sugar
    • 2 tsp dairy-free milk, as needed

Method:

  1. Mix dairy-free milk with half the brown sugar, add yeast, stir briefly, and let sit for 10 minutes until frothy.
  2. In a large bowl, mix dry ingredients. Stir in yeast mixture and melted vegan butter.
  3. Knead dough in a stand mixer or by hand for 8-10 minutes until it's no longer sticky.
  4. Cover with a damp tea towel and let it rise in a warm place until doubled in size.
