Ingredients:

  • Cake:
    • 200g self-raising flour
    • 50g vegan vanilla protein powder

    • 240g dairy-free milk (coconut recommended) mixed with 1 tsp vinegar
    • 65g coconut yogurt
    • 50g coconut oil
  • Frosting:
    • 200g coconut yogurt
    • 50g vegan vanilla protein powder

Method:

  1. Preheat the oven to 170°C. Line two round cake tins with parchment paper.
  2. Mix dairy-free milk with vinegar and set aside to thicken.
  3. In a bowl, sift together the flour, protein powder, desiccated coconut, baking powder, and bicarbonate of soda.
