Ingredients:

  • 120g dark chocolate
  • 60g dairy-free butter
  • 100g light brown sugar
  • 100g caster sugar
  • 100g plant-based yogurt, room temperature
  • 120g self-rising flour
  • 1/4 tsp bicarbonate of soda
  • 240ml dairy-free milk, room temperature
  • 50g cocoa powder
  • 100g dark chocolate chunks or chips

Method:

  1. Preheat the oven to 180°C (fan setting) and line a square baking tin with greaseproof paper.
  2. Melt the dark chocolate and dairy-free butter together, then stir in both sugars until dissolved.
  3. Add in the dairy-free milk and yogurt, stirring until smooth.
  4. Sift in the cocoa powder and flour, mixing until the batter is smooth and glossy.
  5. Fold in the chocolate chunks or chips.
  6. Pour the mixture into the prepared tin.
  7. Bake for 30 minutes, or until the brownies are almost cooked through.
  8. Allow to cool completely in the tin.
