- 1 ½ cups + 3 tbsp (240g) all-purpose flour, sifted
- 2 tsp baking powder, sifted
- ¼ tsp baking soda, sifted
- ¼ tsp salt, sifted
For the Icing:
- 1 ¼ cups (150g) powdered sugar, sifted
- 1 tbsp freshly squeezed lemon juice
- 1 tbsp vegan Greek-style yogurt or plain soy/coconut yogurt
Instructions:
- Preheat your oven to 350°F (175°C). Grease an 8" loaf tin and line it with parchment paper.
- Create vegan buttermilk by combining soy milk and lemon juice; let it sit for 10 minutes.
- In a large bowl, rub the lemon zest and vanilla seeds into the sugar.
- Whisk the melted butter into the sugar mixture. Add olive oil and yogurt, whisking to combine. Mix in the vegan buttermilk.
