Whole Wheat Chocolate Banana Muffins

These chocolate banana muffins are the perfect way to indulge healthily. Made with whole wheat flour, maple syrup, and coconut oil, these muffins are light, tender, and free of refined sugars. Ingredients:

  • 220g Ripe Bananas (about 2, mashed)
  • 1 tbsp White Vinegar (or apple cider vinegar)
  • 120ml Maple Syrup (alternatives: golden syrup, pancake syrup, agave syrup)
  • 180ml Milk (unsweetened almond milk or your choice)
  • 2 tsp Vanilla Extract
  • 60ml Oil (unflavored coconut oil or any flavorless oil of your choice)
  • 200g Whole Wheat Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 25g Cocoa Powder
  • 120g Dark Chocolate Chips

Instructions:

  1. Preparing the Batter: In a large mixing bowl, combine mashed bananas, vinegar, milk, maple syrup, and oil. Whisk until smooth.
  2. In another bowl, sift together whole wheat flour, baking powder, baking soda, salt, and cocoa powder.
  3. Gradually mix the dry ingredients into the wet mixture until just combined. Don’t overmix.
  4. Fold in 3/4 of the chocolate chips. Allow the batter to rest at room temperature for 30 minutes.
  5. Baking: Preheat the oven to 400°F (200°C). Line a muffin tray with liners.
  6. Fill each muffin cup to the rim with the batter. Sprinkle the top of each muffin with the remaining chocolate chips.
  7. Bake in the preheated oven for 8 minutes. Then, reduce the temperature to 350°F (175°C) and continue baking for another 8-10 minutes or until a toothpick inserted comes out clean. Baking times might vary based on your oven and the number of muffins you’re baking.
  8. Once baked, remove from the oven and let them cool on a wire rack for about 10-15 minutes.
  9. Storage: These muffins can be stored in an airtight container at room temperature for 4-5 days.
