Ingredients:

  • Sponge:
    • Self-Rising Flour: 360g
    • Baking Powder: 1 tsp
    • Bicarbonate of Soda: 1/4 tsp
    • Light Brown Sugar: 200g
    • Milk (Soya or choice) + Vinegar: 360ml + 1 tsp
    • Soya Yogurt (or choice): 100g
    • Light Olive Oil or Vegetable Oil: 100g
    • Sweet Cinnamon: 1 tsp
  • Apples:
    • Granny Smith Apples (diced): 2
    • Sugar: 60g
    • Cinnamon: 1 tsp
    • Cornflour: 2 tbsp
    • Water: 2 tsp
  • Layering:
    • Brown Sugar: 80g
    • Cinnamon: 1 tsp
  • Glaze:
    • Icing Sugar: 200g
    • Milk (Soya or choice): 60g
    • Vanilla Extract: 1 tsp

Instructions:

  1. Apple Mixture: Cook apples with sugar, cinnamon, cornflour, and water until softened. Set aside to cool.
  2. Oven Prep: Preheat to 170°C Fan. Line and grease a square baking dish.
  3. Sponge: Mix milk and vinegar; set aside. Combine with wet ingredients, then sift in dry ingredients and mix gently.
  4. Assembly: Spread half the batter in the pan. Layer with apple mixture and most of the brown sugar-cinnamon mix. Cover with remaining batter and sprinkle with remaining brown sugar.
  5. Baking: Bake for 35-40 minutes until set.
  6. Glaze: Mix icing sugar, milk, and vanilla. Pour over the warm cake after poking holes.
  7. Serving: Allow the glaze to set before serving.
