Brown Butter Blueberry Coffee Cake with Streusel Topping

Ingredients:

  • 1/2 cup unsalted butter
  • 1 3/4 cups all-purpose flour
  • 1 1/2 tsp baking powder

  • 2 tsp vanilla extract
  • 1 large egg
  • 1 egg yolk
  • 1 cup milk (any kind)

  • 1/4 cup butter, softened
  • 3 tbsp dark brown sugar
  • 1/3 cup all-purpose flour
  • 1 tsp ground cinnamon

Instructions:

  1. Begin by preheating your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper and lightly grease it to prevent sticking.
  2. Prepare the streusel topping in a bowl by whisking together the flour, dark brown sugar, and cinnamon. Mix in the softened butter until the mixture resembles coarse crumbs. Chill it in the refrigerator to keep it firm.
  3. For the brown butter, melt the butter in a saucepan over medium heat until it turns a lovely golden brown with a nutty aroma. Remove from heat and allow it to cool slightly.
  4. In a large mixing bowl, combine the milk, whole egg, extra yolk, and vanilla extract using a hand mixer. Add the cooled brown butter and mix well.
