Ingredients:
- 3 eggs
- 150 grams of sugar
- 150 grams of melted butter
- 150 grams of yogurt or buttermilk (any thick dairy will work)
Dry Ingredients (Combine the following):
- 1/2 tablespoon of cardamom
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 210 grams of flour
250-300 grams of fresh or frozen blackberries and blueberries, folded in 1 tablespoon of flour
Instructions:
- Preheat your oven to 185°C (fan-forced).
- In a mixing bowl, combine the sugar and melted butter. Add the eggs and whisk for 1 minute.
- Add the yogurt (or buttermilk).
- Sift and gently fold in the dry ingredients.
- Pour the batter into a 22 or 26 cm springform pan lined with baking paper.
- Scatter the frozen berries evenly over the batter.
- Bake in the preheated oven for 45-60 minutes, or until a toothpick inserted comes out clean.
