Chocolate Cheesecake with Dark Chocolate Ganache

Indulge in this rich and creamy chocolate cheesecake, set atop a buttery biscuit base, and crowned with a velvety dark chocolate ganache.

Ingredients:

For the Biscuit Base:

  • 175g Digestive Biscuits, crushed
  • 75g Butter, melted (vegan or regular)

For the Chocolate Cheesecake:

  • 225g Cream Cheese, room temperature (vegan or regular)
  • 92g Dark Chocolate (50-55% cocoa content)
  • 20g Light Brown Sugar
  • 40g Granulated Sugar
  • 7g CornStarch
  • 75g Whipping Cream (vegan or regular)

For the Chocolate Ganache:

  • 60g Dark Chocolate
  • 65g Whipping Cream (vegan or regular)

Method:

  1. Biscuit Base:
    • Preheat your oven to 325°F (155°C).
    • Mix together the crushed digestive biscuits and melted butter until you achieve a wet sand consistency.
    • Transfer this mixture to a lined 6-inch springform cake tin, pressing it into an even layer to create a base roughly 1/2 inch in thickness.
    • Bake for 10 minutes, then set aside to cool.
  2. Chocolate Cheesecake:
    • In a mixing bowl, combine cream cheese with both sugars. Using an electric whisk (or the paddle attachment of a stand mixer), mix on medium speed for 2-3 minutes, scraping down the sides as necessary.
    • In a heatproof bowl, melt the dark chocolate. Once melted, mix it with the whipping cream. Sift in the cornstarch and combine until smooth.
    • Gradually incorporate the chocolate mixture into the cream cheese mixture, blending until smooth.
    • Pour this batter over the biscuit base in the cake tin.
    • Bake in the preheated oven for 15-17 minutes. The edges should feel firm when touched. Turn off the oven, leave the door ajar, and let the cheesecake sit inside for 1 hour.
    • After an hour, remove the cheesecake and allow it to reach room temperature. Then refrigerate overnight.
  3. Chocolate Ganache:
    • Heat the whipping cream in a pot until just below boiling. Pour the hot cream over the dark chocolate. Stir until the mixture is smooth and glossy.
    • Pour this ganache over the set cheesecake. Return the cheesecake to the fridge and allow the ganache to set for a few hours.
