Chocolate Truffle Cheesecake Recipe

This chocolate cheesecake is truly the epitome of decadence. With a crunchy Oreo crust, smooth and creamy cheesecake filling, and topped with a luscious chocolate truffle layer, it’s a dessert that promises delight with every bite!

Ingredients:

For the Crust:

  • Crushed Oreos: 80g
  • Melted Butter: 30g

For the Cheesecake Layer:

  • Cream Cheese (room temperature): 180g
  • Powdered Sugar: 30g
  • Cream: 120g
  • Lemon Juice: 20g
  • Hot Milk: 45g
  • Gelatin: 8g

For the Chocolate Truffle Layer:

  • Chocolate Truffle: 100g
  • Cream: 60g

Instructions:

For the Crust:

  1. In a mixing bowl, combine the crushed Oreos and melted butter until you get a mixture resembling wet sand.
  2. Press this mixture firmly into the bottom of your chosen mold to form a crust.
  3. Refrigerate the crust to set while preparing the cheesecake layer.

For the Cheesecake Layer:

  1. In a large mixing bowl, whip together the cream cheese and powdered sugar until smooth and creamy.
  2. Gradually add the cream while continuing to mix.
  3. Stir in the lemon juice.
  4. In a separate, microwave-safe bowl, combine the gelatin and hot milk, ensuring the gelatin completely dissolves.
  5. Slowly pour the gelatin mixture into the cream cheese mixture, mixing continuously to prevent lumps from forming.
  6. Pour two-thirds of this cheesecake mixture over the set crust in the mold.
  7. Place the mold in the freezer for about 10 minutes to allow this layer to set slightly.

For the Chocolate Truffle Layer:

  1. Heat the 60g of cream in a microwave or stovetop until hot, but not boiling.
  2. Add the chocolate truffle to the hot cream, allowing it to sit for a few minutes to soften. Stir until the chocolate has completely melted and the mixture is smooth.
  3. Combine this chocolate mixture with the remaining one-third of the cream cheese mixture. Stir well until you achieve a smooth, chocolaty batter.
  4. Pour this layer over the slightly set cheesecake layer in the mold.
  5. Refrigerate the cheesecake for at least 3 hours, or until fully set.

To Serve: Once set, remove the cheesecake from the mold. For an added touch of elegance, sift a thin layer of cocoa powder over the top before slicing and serving.
