For the Crust:
- Crushed Oreos: 80g
- Melted Butter: 30g

- Cream Cheese (room temperature): 180g
- Powdered Sugar: 30g
- Cream: 120g
- Lemon Juice: 20g
- Hot Milk: 45g
- Gelatin: 8g
For the Chocolate Truffle Layer:
- Chocolate Truffle: 100g
- Cream: 60g
Instructions:
For the Crust:
- In a mixing bowl, combine the crushed Oreos and melted butter until you get a mixture resembling wet sand.
- Press this mixture firmly into the bottom of your chosen mold to form a crust.
- Refrigerate the crust to set while preparing the cheesecake layer.
For the Cheesecake Layer:
- In a large mixing bowl, whip together the cream cheese and powdered sugar until smooth and creamy.
- Gradually add the cream while continuing to mix.
- Stir in the lemon juice.
- In a separate, microwave-safe bowl, combine the gelatin and hot milk, ensuring the gelatin completely dissolves.
- Slowly pour the gelatin mixture into the cream cheese mixture, mixing continuously to prevent lumps from forming.
- Pour two-thirds of this cheesecake mixture over the set crust in the mold.
- Place the mold in the freezer for about 10 minutes to allow this layer to set slightly.
For the Chocolate Truffle Layer:
- Heat the 60g of cream in a microwave or stovetop until hot, but not boiling.
- Add the chocolate truffle to the hot cream, allowing it to sit for a few minutes to soften. Stir until the chocolate has completely melted and the mixture is smooth.
- Combine this chocolate mixture with the remaining one-third of the cream cheese mixture. Stir well until you achieve a smooth, chocolaty batter.
- Pour this layer over the slightly set cheesecake layer in the mold.
- Refrigerate the cheesecake for at least 3 hours, or until fully set.
