Decadent Salted Chocolate Caramel Cheesecake

  1. Start with the crust by combining the melted butter and crushed biscuits until well mixed. Press this mixture firmly into the bottom of a 22 cm (9 inch) springform pan.
  2. Preheat your oven to 160°C with the fan setting on. Parbake your crust for 10 minutes to set it. While it’s in the oven, move on to the filling.
  3. For the filling, whisk the cream cheese with the sour cream and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Pour this creamy mixture over the prebaked crust in the springform pan.
  5. Now, let’s give your cheesecake a spa treatment with a water bath. Wrap the springform in aluminum foil to prevent water from seeping in, and place it in a deep oven tray. Pour hot water into the tray to come halfway up the sides of the springform.
