This cheesecake is the answer to the sweet dilemma between chocolate and caramel. Crafted for those who love both, this dessert is a harmonious blend of velvety chocolate, rich caramel, and a touch of sea salt. Dive into its luscious layers and experience the sublime melt-in-your-mouth sensation!

For the Cheesecake Filling:

  • 600 g Cream Cheese
  • 200 g Sugar
  • 120 g Sour Cream
  • 3 Eggs
  • 1 tbsp Vanilla Extract

For the Crust:

  • 70 g Butter, melted
  • 280 g Biscuits, finely crushed

For the Chocolate Caramel:

  • 100 g Heavy Cream
  • 200 g Dark Chocolate
  • 1 can Dulce de Leche
  • A pinch of Salt

  1. Start with the crust by combining the melted butter and crushed biscuits until well mixed. Press this mixture firmly into the bottom of a 22 cm (9 inch) springform pan.
  2. Preheat your oven to 160°C with the fan setting on. Parbake your crust for 10 minutes to set it. While it’s in the oven, move on to the filling.
  3. For the filling, whisk the cream cheese with the sour cream and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Pour this creamy mixture over the prebaked crust in the springform pan.
  5. Now, let’s give your cheesecake a spa treatment with a water bath. Wrap the springform in aluminum foil to prevent water from seeping in, and place it in a deep oven tray. Pour hot water into the tray to come halfway up the sides of the springform.
  6. Bake the cheesecake at 160°C for 55-65 minutes. Look for that signature jiggle in the center to know it’s done. Then, cool to room temperature.
  7. For the chocolate caramel topping, heat the heavy cream and pour it over the dark chocolate. Whisk it vigorously until you have a smooth chocolate mixture. Blend in the dulce de leche until completely integrated, then season with a pinch of salt to balance the sweetness.
  8. Pour the chocolate caramel over the cooled cheesecake, spreading it to create a glossy top layer.
  9. Refrigerate the cheesecake for at least 6 hours, or overnight for best results, to set the flavors and achieve the perfect consistency.
  10. Before serving, sprinkle some more crushed biscuits over the top for a delightful crunch.

Indulge in a slice of this salted chocolate caramel cheesecake and let its creamy, dreamy texture and the interplay of flavors enchant your palate. Enjoy the indulgence! 🍮🍫
