Ingredients:

  • 4 eggs
  • 1 cup sugar (minus two fingers’ width)
  • 1 cup flour (minus two fingers’ width)
  • 3 tablespoons cocoa powder
  • 1 packet vanilla sugar
  • 1 packet baking powder

For the Patisserie Cream:

  • 4 tablespoons flour
  • 4 tablespoons cornstarch
  • 1/4 cup sugar
  • 2 egg yolks
  • 4 cups milk (200 ml each)

For the Ganache:

  • 1 box of cream
  • 160 grams chopped chocolate (half milk, half dark)

Instructions:

  1. Whip sugar and eggs for 3-4 minutes until frothy. Gently fold in the dry ingredients and spread evenly on a baking tray lined with parchment paper.
  2. Bake in a preheated oven at 170°C.
  3. For the cream, cook all ingredients over medium heat, stirring continuously. Remove from heat and add vanilla sugar and a teaspoon of butter. Let it cool covered with cling film.
  4. Whip a packet of cream powder into the cooled patisserie cream until shiny.
  5. Add 2 or 3 chopped bananas to the cream and mix.
  6. Cut the baked cake in half, place the first layer on a serving plate, moisten with milk, and spread half of the cream. Top with the second layer of cake, moisten, and add the remaining cream.
  7. For the ganache, heat the cream, remove from heat, and add chopped chocolate. Let it cool slightly before pouring over the cake.
