Golden Butter Chocolate Oat Cookies

Ingredients:

  • 113 g unsalted butter
  • 100 g light brown sugar (½ c.)
  • 50 g granulated sugar (¼ c.)
  • 1 egg, room temperature
  • ½ tsp. vanilla extract
  • 130 g all-purpose flour (approx. 1 c. + 1 ⅓ tbsp.)
  • 60 g rolled oats (approx. ⅔ c.)
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • 130 g semi-sweet chocolate (in your preferred form: discs, bar, or chips)

Instructions:

  1. Preheat your oven to 350°F / 175°C. Prepare a baking sheet with parchment paper or a silicone mat.
  2. Using a saucepan on medium heat, melt and brown the butter. Stir occasionally until the butter attains an amber hue with tiny brown flecks. Check the browned butter’s weight, ensuring it’s around 90g. If short, add a bit of water to reach the desired weight.
  3. Move the browned butter into a bowl and place it in the freezer for about 5 minutes, allowing it to cool. If you’re using a chocolate bar, now’s the time to chop it.
  4. After cooling, combine the browned butter with both sugars and whisk.
  5. Blend in the egg and vanilla until you achieve a smooth mix.
  6. Incorporate the flour, oats, baking soda, baking powder, and salt. Use a spatula for this, folding until only a few traces of flour are visible.
  7. Fold in the chopped chocolate just enough to ensure a consistent dough without any flour streaks.
  8. Drop approximately 3 tbsp. of dough for each cookie on the prepared sheet. Ensure there’s a 2-inch gap between them for spreading while baking.
  9. Optionally, you can add more chocolate on top of each cookie for a richer flavor.
  10. Bake for about 12-14 minutes. Once you notice the cookie edges turning golden brown, they’re ready.
  11. An optional step post-baking: Use a slightly larger bowl than the cookie size to gently shape them into more uniform circles.
  12. Let the cookies stay on the warm baking sheet for around 5 minutes. Afterwards, transfer them onto a wire rack to cool.
