  2. Dough Preparation: In a mixer, stir yeast into milk. Let sit for 5 minutes. Add flour, sugar, salt, and 2 tablespoons butter. Mix to form a dough and knead for 2-3 minutes. Chill for 8-10 hours.
  3. Laminate: Roll chilled dough into a 15×9-inch rectangle. Place butter block on half of the dough, fold, and seal edges. Chill for 10 minutes.
  4. Folding: Roll dough to 21×10 inches. Perform a book fold. Chill for 15-20 minutes. Repeat folding process twice more, chilling between each fold. Rest dough for 1 hour.
  5. Shaping: Divide dough in half. Roll one part into an 8×18-inch rectangle. Cut into 1-inch strips. Layer two strips and roll into a swirl. Place in a greased muffin tin. Repeat with remaining dough.
  6. Proofing: Let cruffins rise for 60 minutes.
  7. Baking: Preheat oven to 400°F (200°C). Bake for 12 minutes, reduce heat to 350°F, and bake for an additional 12 minutes.
