Pastry:

  • 300g flour
  • 75g caster sugar
  • 150g cold butter, cubed
  • 50ml milk

Filling:

  • 4 medium-sized Granny Smith apples
  • 200g soft light brown sugar
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp cornflour
  • 3 tbsp cold water

Decoration:

  • Milk (for brushing on top)
  • Turbinado sugar (for sprinkling)

Instructions:

Filling Preparation:

  1. Start by peeling the apples, then cut them into thin slices.
  2. Transfer the apple slices to a pot and add the sugar, cinnamon, and nutmeg. Mix well.
  3. Place the pot on medium heat, stirring often. Once it starts bubbling, dissolve the cornflour in water and add to the apple mixture. Continue to cook until the mixture thickens.
  4. Once thickened, transfer the filling to a bowl, cover, and chill.

Pastry:

  1. In a bowl, combine the flour, sugar, and cold butter cubes. Using your fingertips, rub the butter into the flour until no large chunks remain.
  2. Add the milk and bring the dough together. Once formed, divide the dough into two halves. Roll each half out thinly.
