Ingredients:
Pastry:
- 300g flour
- 75g caster sugar
- 150g cold butter, cubed
- 50ml milk
Filling:
- 4 medium-sized Granny Smith apples
- 200g soft light brown sugar
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tbsp cornflour
- 3 tbsp cold water
Decoration:
- Milk (for brushing on top)
- Turbinado sugar (for sprinkling)
Instructions:
Filling Preparation:
- Start by peeling the apples, then cut them into thin slices.
- Transfer the apple slices to a pot and add the sugar, cinnamon, and nutmeg. Mix well.
- Place the pot on medium heat, stirring often. Once it starts bubbling, dissolve the cornflour in water and add to the apple mixture. Continue to cook until the mixture thickens.
- Once thickened, transfer the filling to a bowl, cover, and chill.
Pastry:
- In a bowl, combine the flour, sugar, and cold butter cubes. Using your fingertips, rub the butter into the flour until no large chunks remain.
- Add the milk and bring the dough together. Once formed, divide the dough into two halves. Roll each half out thinly.
- Place one rolled-out dough into a tart pan (preferably with a removable bottom). Use a rolling pin to trim the excess pastry around the edges.
Assembly:
- Pour the chilled apple filling into the prepared pastry-lined tart pan.
- Roll out the second half of the pastry and cut into strips. Arrange the strips in a lattice pattern over the apple filling.
- Brush the top of the pie with milk and sprinkle turbinado sugar over it.
- Bake in a preheated oven at 160°C (fan) for 30-35 minutes, or until the pie is golden brown.
Enjoy!
