  • 300g flour
  • 75g caster sugar
  • 150g cold butter, cubed
  • 50ml milk

  • 4 medium-sized Granny Smith apples
  • 200g soft light brown sugar
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp cornflour
  • 3 tbsp cold water

  • Milk (for brushing on top)
  • Turbinado sugar (for sprinkling)

Filling Preparation:

  1. Start by peeling the apples, then cut them into thin slices.
  2. Transfer the apple slices to a pot and add the sugar, cinnamon, and nutmeg. Mix well.
  3. Place the pot on medium heat, stirring often. Once it starts bubbling, dissolve the cornflour in water and add to the apple mixture. Continue to cook until the mixture thickens.
  4. Once thickened, transfer the filling to a bowl, cover, and chill.

  1. In a bowl, combine the flour, sugar, and cold butter cubes. Using your fingertips, rub the butter into the flour until no large chunks remain.
  2. Add the milk and bring the dough together. Once formed, divide the dough into two halves. Roll each half out thinly.
  3. Place one rolled-out dough into a tart pan (preferably with a removable bottom). Use a rolling pin to trim the excess pastry around the edges.

  1. Pour the chilled apple filling into the prepared pastry-lined tart pan.
  2. Roll out the second half of the pastry and cut into strips. Arrange the strips in a lattice pattern over the apple filling.
  3. Brush the top of the pie with milk and sprinkle turbinado sugar over it.
  4. Bake in a preheated oven at 160°C (fan) for 30-35 minutes, or until the pie is golden brown.
