Ingredients:

  • Cake:
    • 360g self-rising flour
    • 1 tsp baking powder
    • 1/4 tsp bicarbonate of soda
    • 150g sugar
    • 360ml dairy-free milk mixed with 2 tsp apple cider vinegar
    • Juice and zest from 2 limes
    • 90g dairy-free yogurt
    • 80g olive oil
    • 3 tbsp poppyseeds
  • Chocolate Sauce:
    • 200g dairy-free white chocolate
    • 200ml dairy-free milk

Method:

  1. Preheat the oven to 170°C and grease a cake tin.
  2. Combine the dairy-free milk, lime juice, and vinegar, setting aside to thicken.
  3. Stir in the other wet ingredients, including lime zest.
  4. Gently mix in the sifted dry ingredients.
  5. Stir in the poppyseeds.
  6. Pour the batter into the prepared tin and bake for 40-50 minutes.
