One Layer Chocolate Cake with Salted Peanut & Chocolate Glaze

Chocolate Cake Ingredients:

  • 150ml Milk (Unsweetened almond milk or your choice)
  • 15ml White Vinegar
  • 130g Granulated Sugar
  • 1tsp Vanilla Extract
  • 80ml Neutral Oil
  • 140g All Purpose Flour
  • 15g Cocoa Powder
  • 1/4tsp Baking Soda
  • 3/4tsp Baking Powder
  • A pinch of Salt

Chocolate Cake Method:

  1. Preheat the oven to 350°F (175°C) and line a 6-inch round springform pan with baking paper.
  2. Mix warm milk and vinegar in a bowl. Allow it to sit for 5 minutes.
  3. Add oil, vanilla extract, and granulated sugar to the milk mixture. Whisk until sugar is dissolved.
  4. In a separate bowl, combine all the dry ingredients.
  5. Gently fold the dry ingredients into the wet mixture.
  6. Pour the batter into the prepared pan.
  7. Bake for approximately 25-30 minutes or until the cake feels firm to the touch.
  8. Allow the cake to cool in the pan for 1 hour at room temperature. Remove the springform ring and chill the cake in the fridge for an additional 30 minutes.
  9. Carefully trim the top of the cake using a serrated knife. Keep the cake in the fridge while preparing the glaze.

Salted Peanut & Chocolate Glaze Ingredients:

  • 160g Dark Chocolate
  • 40ml Neutral Oil
  • 55g Salted & Roasted Peanuts, finely chopped

Glaze Method:

  1. In a microwave-safe jar, combine chocolate and oil. Melt together in 30-second intervals, stirring in between until fully combined.
  2. Add the finely chopped peanuts to the mixture and stir.
  3. Place the cake on a wire rack set over a baking tray.
  4. When the chocolate mixture reaches roughly 95°F (35°C), pour it over the cake, ensuring it covers the sides. Use an offset spatula to spread the glaze evenly on the top.
  5. Let the cake stand for about 15 minutes on the rack, allowing any excess glaze to drip off.
  6. Carefully transfer the cake to a plate and chill in the fridge for an additional 30 minutes before serving.
