Spiced Apple Crumble Cake

Crumb Topping Ingredients:

  • 90g Unsalted Butter (cold and cubed)
  • 90g All-Purpose Flour
  • 112g Light Brown Sugar
  • 1/4 tsp Salt

Crumb Topping Method:

  1. In a bowl, mix the butter, flour, brown sugar, and salt. Use a pastry cutter or an electric mixer on low speed to blend until the mixture becomes clumpy and moist, ensuring no dry flour remains.
  2. Place this mixture in the refrigerator to chill while preparing the cake batter.

Cake Ingredients:

  • 245g Milk
  • 15g White Vinegar
  • 80g Vegetable Oil
  • 40g Butter (melted)
  • 2 tsp Vanilla Extract
  • 160g Grated Apples (mix of Granny Smith and Pink Lady, save some for topping)
  • 330g All-Purpose Flour
  • 185g Brown Sugar
  • 3 tsp Baking Powder
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Salt

Cake Method:

  1. Preheat the oven to 350°F (175°C). Prepare a 9-inch round cake pan by lining it with parchment paper.
  2. Grate the apples, using a cloth or paper towel, press to remove any excess moisture.
  3. In a large bowl, whisk together the dry ingredients: flour, brown sugar, baking powder, cinnamon, and salt.
  4. In a separate bowl, mix together the wet ingredients: milk, white vinegar, vegetable oil, melted butter, and vanilla extract until just combined.
  5. Gradually mix the wet ingredients into the dry ingredients. Stir until just combined to avoid overmixing.
  6. Fold in the grated apples. The batter will be thick.
  7. Transfer the cake batter into the prepared cake pan. Smooth the top with a spatula.
  8. Arrange the reserved apple slices on top of the batter for decoration, then generously sprinkle with the chilled crumb topping.
  9. Bake for 40-50 minutes, or until a toothpick inserted into the center of the cake comes out clean and the cake is firm to the touch.
  10. Let the cake cool completely on a wire rack.
