Ingredients for Gluten-Free Chocolate Cake:

  • 110g Dark Chocolate or Semi-Sweet Chocolate
  • 65g Butter
  • 120g Granulated Sugar
  • 65g Gluten-Free Flour
  • 40g Cocoa Powder
  • 118g Milk (room temperature, vegan or dairy)
  • 1/2 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1/4 tsp Baking Powder

Method:

  1. Preheat your oven to 330°F (165°C). Prepare a 6-inch bottomless cake ring by lining it with baking paper and securing with aluminum foil.
  2. Melt the chocolate and butter together in a heatproof bowl over a pot of simmering water or in a microwave. Ensure the mixture remains warm and liquid.
  3. Pour the warm chocolate-butter mixture into a mixing bowl. Add room temperature milk and stir until well combined.
  4. Sift together the gluten-free flour, cocoa powder, baking powder, and salt directly into the bowl with the chocolate mixture. Fold everything together gently using a spatula or a whisk until just combined.
  5. Transfer the batter into the prepared cake ring. Bake for 20-22 minutes at 330°F (165°C).
  6. After baking, allow the cake to cool completely before proceeding to the chocolate cream layer.

For the Milk Chocolate Layer:

  • 150g Milk Chocolate
  • 75g Heavy Cream
  1. Heat the heavy cream until it begins to boil. Then pour it over the milk chocolate pieces.
  2. Stir until the chocolate is fully melted, creating a smooth and glossy cream. Allow this mixture to cool for about 10 minutes.
  3. Pour the milk chocolate layer over the cooled cake. Refrigerate overnight to set.

Finishing Touches:

  • 200g Whipped Cream (for the next day)
  • Cocoa Powder for dusting
  1. The following day, layer the top with whipped cream and return to the freezer to set overnight.
  2. Once set, carefully remove the cake from the ring.
  3. Dust the top with cocoa powder for a sophisticated finish.
  4. Serve and enjoy your slice of chocolate heaven!
