Triple Layer Chocolate Cake with Cream Cheese Frosting

Chocolate Cake Ingredients:

  • 240ml Milk (unsweetened almond milk or any choice)
  • 1 tsp Vinegar (white or apple cider)
  • 90ml Neutral Oil
  • 175g Granulated Sugar
  • 1 tsp Vanilla Extract
  • 150g All-Purpose Flour
  • 50g Cocoa Powder
  • 1/2 tsp Baking Powder
  • 3/4 tsp Baking Soda
  • 1/4 tsp Salt

Method:

  1. Preparation: Preheat your oven to 350°F (175°C). Grease three 6-inch round cake tins and line the bottoms with parchment paper.
  2. Sift Dry Ingredients: In a mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Prepare Wet Mix: In a separate bowl, combine the warm milk and vinegar. Allow it to sit for 5 minutes to slightly curdle. Add in the oil, followed by sugar, and whisk until smooth and well-combined.
  4. Combine & Bake: Slowly fold the dry mix into the wet mixture until you have a smooth batter. Divide the batter evenly among the prepared tins. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let the cakes cool in the tins, then transfer to a wire rack to cool completely.

Vanilla Cream Cheese Frosting Ingredients:

  • 113g Butter (vegan or regular)
  • 113g Room Temperature Cream Cheese (vegan or regular)
  • 1 tsp Vanilla Extract
  • 150g Powdered Sugar

Method:

  1. Whip Butter & Sugar: In a mixing bowl, use an electric whisk or paddle attachment to whip together butter and powdered sugar for about 5 minutes until it's fluffy and creamy.
  2. Add Cream Cheese: Incorporate the softened cream cheese and vanilla extract. Whip for an additional minute until combined.

Assembling the Cake:

  1. Place one cake layer on your serving plate or cake stand. Spread a generous amount of the cream cheese frosting on top. Repeat with the other layers.
  2. Use the remaining frosting to cover the sides and top of the cake, smoothing it out with a spatula.
  3. Refrigerate the cake for 30 minutes to set the frosting.
  4. Before serving, drizzle some fudge sauce over the top, allowing it to drip down the sides for an added touch of decadence.
