Vegan Coffee Streusel Cake with Icing Drizzle

Indulge in this scrumptious vegan coffee streusel cake, enhanced with a delicate icing drizzle. It offers a delightful balance of sweetness and subtle coffee notes, making it perfect for any occasion.

Ingredients

For the Streusel:

  • 360g plain/all-purpose flour
  • 200g light brown sugar
  • 100g caster sugar
  • 1 + 1/2 tablespoons ground cinnamon
  • 220g vegan butter (melted)

For the Cake:

  • 360g plain/all-purpose flour
  • 180g caster sugar
  • 3 teaspoons baking powder
  • 2 teaspoons fine ground coffee granules
  • 300ml dairy-free milk
  • 225ml sunflower oil
  • 2 teaspoons vanilla extract
  • 160g apple sauce

For the Drizzle:

  • 100g icing sugar
  • Dairy-free milk (quantity as needed)

Instructions

  1. Streusel Preparation: a. Kickstart your oven to preheat at 180°C fan setting. b. Line a 32cm rectangular baking tin using greaseproof paper and keep aside. c. In a mixing bowl, sift the flour, followed by both sugars and cinnamon. Blend them together. d. Melt the vegan butter either in a microwave or over the stove. Once melted, pour it over the dry mixture. Use a fork for blending as it helps in forming the desired streusel texture. Keep this aside for later.
  2. Cake Batter: a. Take a medium-sized bowl and sift the flour, sugar, baking powder, and the coffee granules. b. In a different bowl, combine the dairy-free milk, sunflower oil, vanilla extract, and apple sauce. Whisk them till they meld. c. Gradually introduce the wet mixture to the dry ingredients, stirring gently to form a smooth batter. Avoid overmixing. d. Pour half of this batter into your prepped baking tin, smoothing it out. Sprinkle half of your streusel mix over it, ensuring an even coverage. Follow this by pouring the remaining batter and topping it off with the rest of the streusel. e. Bake this arrangement in the oven’s center for about 45-50 minutes. The cake is done when a skewer or toothpick, upon insertion, comes out clean and the surface feels springy. If the streusel seems to darken too much during baking, lightly cover the cake with foil. However, this issue is rare. f. Once baked, allow the cake to cool in its tin for about 30 minutes. Post cooling, gently lift it out and let it cool further on a wire rack.
  3. Icing Drizzle: a. Sift the icing sugar into a bowl. Add dairy-free milk, a teaspoon at a time, mixing continuously till you achieve a thick yet pourable consistency. b. Generously drizzle this icing over the entire cake and let it sit for 10 minutes, allowing it to set.
  4. Serving: a. Using a sharp serrated knife, slice the cake into square portions and it’s ready to be served!
