  • Topping:
    • Dairy-Free Butter (melted): 50g
    • Light Soft Brown Sugar: 50g
    • Pears (sliced): 2
  • Sponge:
    • Self-Rising Flour: 360g
    • Baking Powder: 1 tsp
    • Bicarbonate of Soda: 1/4 tsp
    • Light Brown Sugar: 150g
    • Dairy-Free Milk + Vinegar: 300ml + 1 tsp
    • Dairy-Free Yoghurt: 100g
    • Light Olive Oil: 80g
    • Pear (grated): 1
    • Sweet Cinnamon: 1 tsp
    • Ground Ginger: 1 tsp
    • Ground Allspice: ½ tsp

Instructions:

  1. Preparation: Preheat oven to 170°C Fan. Line a springform cake tin (approx 24cm) with parchment paper.
  2. Topping: Pour melted dairy-free butter into the tin. Add brown sugar and arrange sliced pears on top.
  3. Batter: Mix dairy-free milk with vinegar. Combine with other wet ingredients. Sift in dry ingredients and mix gently.
