  • 200g Plain Flour
  • 70g Ground Pistachios
  • 100g Chopped Dark Chocolate
  • ½ teaspoon Bicarbonate of Soda
  • 100g Caster Sugar
  • 100g Light Brown Sugar
  • 130g Dairy-Free Butter (melted)
  • 40g Dairy-Free Yoghurt


  1. Preparation: Preheat the oven to 170°C Fan. Line two baking trays with parchment paper.
  2. Creaming: In a bowl, cream together melted dairy-free butter and sugars until well combined.
  3. Mixing: Add dairy-free yoghurt and mix. Stir in flour and bicarbonate of soda until just combined. Avoid overmixing.
  4. Adding Extras: Gently fold in chopped dark chocolate and ground pistachios.
  5. Chilling: Chill the dough in the refrigerator for at least 30 minutes.
  6. Forming Cookies: Scoop out 12 portions of dough and roll into balls. Place on the prepared trays.
