Vibrant Orange Bundt Cake with Blood Orange Glaze

Ingredients for the Orange Bundt Cake:

  • 240ml (1cup) Milk (vegan unsweetened milk or your choice)
  • 2tsp White Vinegar
  • 120g (1/2cup) Fresh Orange Juice (from 2-3 oranges)
  • 1tsp Vanilla Extract
  • 2tbsp Orange Zest (from 2 oranges)
  • 300g (1cup +1/2cup) Granulated Sugar
  • 170g (3/4cup) Melted & Warm Butter (vegan butter or regular)
  • 330g (2+2/3cup) All-Purpose Flour
  • 30g (2tbsp) Corn Starch
  • 1+1/2tsp Baking Powder
  • 1/2tsp Baking Soda
  • 1/4tsp Salt

Method:

  1. Prepare the Pan: Preheat your oven to 350°F (175°C). Generously grease a 9-inch Bundt pan with soft butter, followed by a light spray of oil.
  2. Infuse the Sugar: In a bowl, combine the granulated sugar with the orange zest. Use your fingers to rub them together, allowing the zest to infuse its flavor into the sugar.
  3. Mix Liquids: In a separate bowl, mix together the milk, vinegar, and orange juice.
  4. Combine Dry Ingredients: In a large bowl, sift and combine the flour, corn starch, baking powder, baking soda, and salt. Add the zest-infused sugar and blend well.
  5. Batter Time: Pour in the liquid ingredients, mixing gently. Incorporate the melted butter, ensuring a smooth batter. Transfer the batter into the Bundt pan, spreading it evenly.

  • 14g (1tbsp) Melted Butter
