Ingredients:
- 70 g unsalted butter
- 140 g all-purpose flour
- 1 ¼ tsp. baking powder
- ¼ tsp. salt
- 100 g blueberries
- 100 g granulated sugar
- 1 egg
- ½ tsp. vanilla extract
- 120 g whole milk kefir
Instructions:
- Preheat oven to 425°F / 220°C. Prepare a 6-cup muffin pan with parchment liners.
- Brown butter in a saucepan until amber. Transfer to a bowl (ensure 55-60g butter remains).
- Whisk flour, baking powder, and salt. Toss blueberries with 1 tbsp. of this mixture.
- Mix sugar, brown butter, egg, vanilla, and kefir.
- Fold in dry ingredients until almost combined, then fold in blueberries.
- Distribute batter in muffin cups. Optionally, sprinkle with turbinado sugar.
- Bake at 425°F for 5 minutes, then reduce to 350°F / 175°C and bake 10 more minutes, or until done.
