Blueberry Muffins

Ingredients:

  • 70 g unsalted butter
  • 140 g all-purpose flour
  • 1 ¼ tsp. baking powder
  • ¼ tsp. salt
  • 100 g blueberries
  • 100 g granulated sugar
  • 1 egg
  • ½ tsp. vanilla extract
  • 120 g whole milk kefir

Instructions:

  1. Preheat oven to 425°F / 220°C. Prepare a 6-cup muffin pan with parchment liners.
  2. Brown butter in a saucepan until amber. Transfer to a bowl (ensure 55-60g butter remains).
  3. Whisk flour, baking powder, and salt. Toss blueberries with 1 tbsp. of this mixture.
  4. Mix sugar, brown butter, egg, vanilla, and kefir.
  5. Fold in dry ingredients until almost combined, then fold in blueberries.
  6. Distribute batter in muffin cups. Optionally, sprinkle with turbinado sugar.
  7. Bake at 425°F for 5 minutes, then reduce to 350°F / 175°C and bake 10 more minutes, or until done.
