Classic Cherry Cheesecake with Cinnamon Crust and Vanilla Topping

Ingredients:

  • For the Crust:
    • 260 g cinnamon cookies (Lotus biscuits recommended)
    • 90 g melted butter
    • 2 tbsp sugar
  • For the Cheesecake Filling:
    • 600 g cream cheese
    • 100 g crème fraîche
    • 200 g sugar
    • 3 eggs
    • 100 g cherry syrup
    • 1 tbsp vanilla essence (optional)
  • For the Vanilla Topping:
    • 150 g cream cheese
    • 250 ml whipping cream
    • 50 g icing sugar

Instructions:

  1. Prepare the Crust:
    • Preheat the oven to 160°C (320°F).
    • Combine cinnamon cookies, melted butter, and sugar. Press the mixture into a 22 cm springform pan.
    • Bake the crust for 8 minutes and set aside.
  2. Make Cheesecake Filling:
    • Whisk cream cheese and crème fraîche by hand until smooth.
    • Add sugar and whisk again. Incorporate eggs and vanilla essence, whisking just until combined.
    • Pour half of the cheesecake mixture over the crust. Drizzle some cherry syrup, then add the remaining cheesecake mixture and top with the rest of the syrup.
  3. Bake Cheesecake:
    • Prepare a water bath by placing it underneath the oven rack. This creates a humid environment without the cake being in the water.
    • Bake the cheesecake for 45-60 minutes at 160°C until slightly jiggly in the center. Allow it to cool to room temperature.
  4. Prepare Vanilla Topping:
    • Using an electric mixer, blend cream cheese and icing sugar until smooth.
    • Gradually add whipping cream and whisk for about 30 seconds until it thickens. Avoid overmixing.
  5. Assemble and Chill:
    • Once the cheesecake is at room temperature, spread the vanilla topping over it.
    • Let the cheesecake set in the fridge overnight, or for at least 5-6 hours if serving the same day.
