Recipe for an 18-20cm Mold: Ingredients: Crust:

  • 180g speculoos cookies
  • 90g unsalted butter, melted

Cheese Cream:

  • 540g mascarpone
  • 160g sugar
  • 1/2 tsp salt
  • 40g flour
  • 360ml crème fraîche
  • 5 medium eggs
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • Speculoos spread for topping

Method:

  1. Preheat the oven to 175°C with fan assist.
  2. Crush speculoos cookies and mix with melted butter until well incorporated.
  3. Press the mixture into the bottom of the mold using a glass.
  4. Bake for 15 minutes, then increase the oven temperature to 225°C.
  5. Mix mascarpone, sugar, salt, flour, crème fraîche, eggs, yolk, and vanilla extract in the order listed until smooth.
  6. Avoid using a mixer to prevent incorporating too much air.
  7. Pour the mixture over the crust and bake for 10 minutes. Then reduce the temperature to 120°C and bake for another 1 hour and 15 minutes.
